Snacking Healthy

Because of my incredibly strong sweet tooth, I’m always craving sugary treats throughout the day. Although candy and chocolate are satisfying in the moment, they make it so difficult to stay energized and focused. sugar-cravings-part-2-1200x480

My newest discoveries on a easy and healthy snack is the toasted sweet potatoes.I absolutely love sweet potatoes but I’m not a huge fan of waiting the hour or so it takes to cook.To cut down on this interminable wait, slice them and pop ‘em in your toaster.

To get in on this action, cut some sweet potatoes lengthwise into 1/4-inch slices and put them in your toaster. Cook them on the highest setting until the outsides start to brown and they can be pierced with a fork. Depending on how hot your toaster runs, this should take about fifteen minutes. (You may have to push them back down into the toaster a few times. It’s worth noting that the toaster method is only practical if you’re cooking a sweet potato or two, but slicing before popping in the oven will also radically reduce the cooking time)

Remove from the toaster,Once the spud is toasted, feel free to top it with the accouterments of your choice. My favorite is one with avocado, salt, pepper, and some lemon zest and just like that you have a snack.
